Healthy Chopped Salad

Here is one of my favorite salad recipes. perfect for the summer. it is light, balanced, and full of nutrients! I hope you enjoy this recipe. its a great one to meal prep and take eon the go when you're in a rush.

INGREDIENTS:

romaine lettuce

1 apple (I like cosmic crisp the best)

1 can corn

chopped carrots

goat cheese

1 English cucumber

finely shredded chicken

1/2 avocado

Dressing:

1/2 c olive oil

1/2 c balsamic vinegar

2 tbs dijon mustard

2 tsp garlic, minced

1 tsp onion powder

1 tsp salt

peper to taste

Begin by cooking the chicken at 400F for 20 minutes. While chicken is cooking go ahead and combine the dressing ingredients together. Whisk until well mixed.

Take chicken out of oven and allow to cool. Next chop up the lettuce, carrots, cucumber, avocado and apple. Drain and rinse the corn.

In a food processor, finally shred the chicken until tiny bits. Assemble salad and enjoy

Makes several servings so enjoy the next day as well!
